Ingredients Used for Biryani

  • Godrej Jersey Ghee

Medium-chain fatty acids found in ghee have potent detoxifying and gut-health promoting qualities. The surprising fact about ghee is in ancient scriptures where it has been called gold, even our ancestors believed it is good for the soul and mind. Ghee is also known as a "Sattvic" food because it is used to get rid of harmful substances in the body.

  • Chicken

We suggest using Chicken breasts, skin-on pieces of chicken, such as thighs or drumsticks, for maximum flavour. Slow cooking chicken breast will substantially enhance the meat flavours.

  • Herbs

For chicken marination, prefer using fresh herbs like coriander leaves and mint leaves. Keep a few extras aside because they make a nice garnish.

  • Aromatics

Herbs, spices, and ginger garlic paste are used to marinate the chicken. All of these spices are released into the rice while the chicken steams.

Steps by Step Instructions
Step 1 - Wash 300g of basmati rice in cold water until the water flows clear.
Step 2 - Heat 25 gm butter in a large pot, now add 1 bay leaf, 3 cardamom pods, 1 small cinnamon stick, and 1 finely chopped large onion. Cook this for 10 minutes.
Step 3 - Add 4 chicken breasts and onion chopped into big bits and 4 tbsp curry paste after adding 1 tsp of turmeric and jersey ghee. Cook until fragrant.Step 4 -Then add 850ml of chicken stock after stirring the rice into the pan. Also add some raisins.
Step 5 - After this, leave the water to be boiled. Cover the pan tightly, reduce the heat to its lowest setting, and continue cooking the rice for an additional 5 minutes.
Step 6 - Leave the heat off for ten minutes. Stir slowly, adding 15 gm of chopped coriander. Top with 2 tbsp toasted almonds.
