Ingredients

For Batter:

  • 2 cups of Rice
  • 1/2 cup of Urad Dal
  • 1/3 cup of Chana Dal
  • 1 teaspoon of Methi Seeds

To Cook:

  • Salt
  • Godrej Jersey Ghee

Instructions

  • Firstly you need to prepare the dosa batter for which you need the following ingredients as mentioned above: 2 cups of rice, ½ cup of urad dal, 1/3 cup of chana dal.
  • For fermentation, add 1 teaspoon of methi seeds or fenugreek.
  • Give these a thorough washing two to three times until the water becomes clear and then combine them with water.
  • Let it soak in drinking water for at least four to five hours.
  • After five hours, it's time to start making the batter. We will need to mill the combination that we soaked in water. Grind it till it forms a smooth paste, not exactly smooth it should have a slight greenish appearance.
  • Be careful not to grind the batter too much, it will affect the crispiness of the dosa.
  • Transfer the batter in the bowl. After this, place this batter in a location where it may naturally get heated up for fermentation of 12 hours. In winter, this process might take 24 hours.
  • To determine whether or not the fermentation is complete, just check the amount of the batter. Ideally the batter would rise twice the original quantity.
  • Once fermented, add salt as per taste and a little bit of water.
  • After this, heat a pan over medium flame..
  • Once it is heated, place the batter in the pan and using a round spoon shape it by spreading in one direction on a high flame.
  • Add 1-2 spoons of Godrej jersey ghee and reduce the heat slightly.
  • Dosa’s dark texture indicates that it has been cooked.
