Delicious Plum Cake Recipe for Christmas with Godrej Jersey Ghee

Ingredients

  • 250 gm Fine Flour
  • 150 gm Brown Sugar
  • 30 gm Almonds
  • 30 gm Walnuts
  • ¼ cup Milk
  • 160 gm Godrej Jersey Ghee
  • 1 tbsp Cinnamon Powder
  • 100 gm Plums or Prunes
  • 5 drops Vanilla essence
  • 2 tbsp Baking Powder
  • 3 Eggs

Preparation
1. Combine flour and baking powder in a big bowl using a sieve. Set apart.
2. Now, mix the brown sugar and Godrej Jersey ghee in a separate bowl. Stir until the sugar is fully dissolved. Use an electric blender to aid.
3. The eggs should now be broken and added one at a time. Beat the mixture continuously until it becomes foamy and light.
4. With a spoon, gradually add the flour to the egg, ghee, and sugar mixture, making sure there are no lumps. Keep swirling until the mixture is smooth.
5. Mix well after adding the milk and vanilla essence. Blend again after adding the cinnamon powder.
6. Allow the batter to rest for 10 minutes.
7. Finely chop the prunes and nuts in the meantime. Beat well after adding them to the batter. Keep some nuts aside to decorate the cake with.
8. Heat the oven to 180° for 15 minutes.
9. Use butter paper to line the baking dish. Dust it with flour after greasing it with Godrej Jersey Ghee. Pour in the batter.
10. Bake the cake for an hour at 180° C or 45 minutes at 200° C. The sort of oven you have has an effect on the temperature.
11. To determine whether the cake is done, stick a knife through it. Take out the cake and set it on a wire rack to cool.

Tips to Make the Best Plum Cake

  • Always use fresh plums in your cake batter. If you don`t have fresh plums, then use canned or frozen plums.
  • Don`t over mix the batter, because this will lead to a tough and dense cake.
  • Use all purpose flour for your cake batter instead of self raising flour because it will give your cake a lighter texture and taste.
  • Grease and line the pan with butter paper to prevent sticking or burning of the bottom of the crusts.
  • Bake at 180° C for 40 minutes or until a toothpick inserted in the centre comes out clean.
